Moderate acidity and fruity taste. Made from the traditional grape varieties Chardonnay and Pinot Noir, this sparkling wine expresses Niagara's traditional wine style. It features complex aromas of floral, citrus, nuts, and toast. After secondary fermentation in the bottle, it is aged in barrels for up to 36 months.
Cuvee Catherine was named after Henry's widow, Catherine.
