"Late Harvest Wine" is a luxurious dessert wine blessed by the Canadian nature. As the name suggests, Late Harvest is a sweet wine made from grapes harvested later than the usual harvest season. While regular grapes are harvested from August to October, late harvest wines are harvested from October to December. One of the characteristics of late harvest wines is that the grapes are frozen by frost. The freezing causes the grape cells to burst, concentrating the sugars and flavors. This freezing gives the wine a rich flavor. Unlike icewine, which is limited to grapes that are firmly frozen at -8°C or below, there is no temperature restriction, so there is less risk in production.

Late harvesting allows the grapes to have a higher sugar content. The sugar content is between 30 and 34 degrees, giving it a sweet taste. It has just the right amount of sweetness for an icewine, making it ideal for pairing with food.
