[Variety introduction] Chardonnay

Chardonnay is famous as a grape variety that represents white wine. Even if you are not an expert on wine, you have probably heard of it at least once. This time, we will introduce Chardonnay.
What is Chardonnay?
Chardonnay, also known as the king of white grapes, is a popular variety worldwide and is also one of the most popular grape varieties in Ontario, Canada, where each winery produces its own style using different fermentation techniques and the use of oak barrels to age the wine.
Taste and aroma characteristics
●Unoaked Chardonnay (no barrel aging)
Slightly off-dry and light, it has a crisp, clean and refreshing taste, with aromas and flavors of apples, pears, citrus fruits and tropical fruits.
●Oaked Chardonnay (barrel aged)
Structured and dry, with a buttery smooth finish, it offers a bouquet and flavors of ripe apple, pear, pineapple, melon, fig, oak, spices, vanilla, nuts, butter, cream, honey and coffee beans.
Foods that go well with Chardonnay
Since barrel-aged and non-barrel-aged sakes go well with different dishes, there is a wide range of dishes that go well with them.
The unaged Chardonnay is rich in acidity, refreshing and fruity. It goes well with seafood and salads, as well as sweet and sour pork, which pairs beautifully with the sweetness of the pork and seasonings.
Wine should be served well chilled, as this brings out the sharp acidity and makes it even more delicious.
Well-aged Chardonnay pairs well with cooked seafood and fried foods. We recommend fried chicken wings and meat and potatoes. It has a powerful and well-balanced acidity, and goes well with Japanese soup stock.
